Homemade Vanilla Granola

So this went down this weekend & it's AMAZING!!!

3 cups oats
3/4 cups nuts of your choice (I have used pine nuts and chopped pecans)
1/2 tsp cinammon
Pinch salt
1/2 cup honey
1/4 cup coconut oil
1 Tbs vanilla extract 
1/4 tsp almond extract
1 Tbs flaxseed (optional)

Preheat oven to 300 degrees. Mix oats, nuts, cinnamon and salt in one bowl. 

In another bowl, mix honey, coconut oil, vanilla extract, and almond extract (heat up for 10 seconds if necessary). 

Combine wet ingredients with oats mixture. I like to use my hands to make sure it is combined how I like and create those granola clusters I love!

Spread out on a coconut oil greased baking sheet or cover baking sheet with foil. 

Bake for 35-40 minutes, stirring every 15 minutes. Let it sit out to cool and harden. 

Then enjoy to your heart's desire!

Super good with Shakeology "frozen yogurt"....just sayin!!
